Gluten free Santa’stic cookies & Latte Chaï tea

I love Christmas. One of the things I enjoyed the most is Christmas treats! No surprise there. I tried to prepare a few easy snacks to eat or offer.


As my mom is intolerant to gluten, this recipe is gluten free. Who knows maybe Santa has also discovered an intolerance to it too..

Gluten free Santa’stic cookies



– 250 gr gluten free flour : I use rice flour the first time, and chesnut flour & rice flour the second one

– 140 gr natural brown sugar or raspadura

– 50 gr almonds

– 50 gr hazelnuts

– 50 gr vegetable oil

– 100 ml soy milk

– 1 tsp bicarbonate soda


– cacao (optional)




In a blender, mix hazelnuts & almonds then add vegetable oil until it forms a butter.

Add all other ingredients. Add cinnamon, cacao or any other spices depending on your taste. Mix well.

Knead the dough with your hands (the best step of the recipe). It shouldn’t be too sticky (if it is, try adding flour).

On a sheet of baking paper, lay out the dough with a pastry roll. (if you don’t have one, try with a glass bottle or a long glass). Use cookie cutter of the form you like.



Put in the oven during 10 to 15 minutes at 200°C.

Latte Chai tea!

 Ingredients: (For 2 cups)

– 2 tsp of black tea

– 1 or 2 tsp natural brown sugar

– 1/2 tsp cinnamon

– 1/2 tsp ginger

– 1/2 tsp cardamom

– 2 cups of water

– 1 cup of any vegan milk


Put every ingredient except for milk in a pan and let them boil during 5 minutes.

Then remove tea and add milk during 2 or 3 minutes until warm.

Remove from fire and pour into two cups.

You can add cinnamom on top to decorate if you like.

This is the perfect alternative to cookies & milk for Santa!
